It may be all Greek at the Majestic Hotel's Elia restaurant – but it's not the Greek that you necessarily know, thanks to celebrity chef Yiannis Baxevanis and his commitment to exposing diners to a different side of Hellenic cuisine. Sure, you'll find traditional favourites, like moussaka and chicken souvlaki on the menu. But, Baxevanis – who has been dubbed the aroma magician because of his creative use of herbs and flowers in his food, has put a more contemporary spin on Greek cuisine.
Fried halloumi cheese is accompanied by fig sauce seasoned with crushed black pepper and ginger. Beef meatballs are served with a black-eyed beans salad, infused with roasted red capsicums from Florina, and topped with a light yoghurt sauce. And sea bass filets are adorned with wild herbs, placed on beds of creamy risotto, and then topped with a traditional egg-lemon sauce.
