1. Wake up to fresh vegan pancakes


Start your mornings on a food conscious note with this quick and simple recipe, which takes only 20 minutes to prep and cook. Serving size is six pancakes.

What you need:

  • 1/2 cup gluten-free oats
  • 1/3 cup + 3 tablespoons almond milk
  • 1 medium-sized banana
  • Handful of flax seeds
  • 3 tablespoons maple syrup

Method


  1. Mix all the ingredients in a food processor until it forms a paste. Add more almond milk in increments if the consistency is too thick.
  2. Spray coconut oil onto a nonstick pan and place on low flame.
  3. Pour the pancake batter into small circles. Watch closely so it doesn’t burn.
  4. Flip the pancakes over to cook both sides.ds
  5. Remove from the pan and onto a plate. Top your stack of pancakes with blueberries, banana or fruits of your liking with a drizzle of maple syrup on top.

2. Snack on peanut butter and choco balls


The perfect afterschool or mid-day snack, roll your sleeves up to make these gluten and dairy-free treats at home. It takes five minutes to prep, two to three hours to cook and gives you up to 15 balls to enjoy.

What you need for the peanut butter balls:


  • 3/4 cup all natural peanut butter
  • 1/4 cup maple syrup
  • 1/2 cup coconut flour
  • Pinch of salt

What you need for the chocolate coating:


  • 1 cup cacao butter
  • 8 tablespoons maple syrup
  • 1/2 cup cacao powder
  • Pinch of salt

Method


  1. Start with mixing all the ingredients for the balls. You can use a food processor to blend thoroughly or with your hands. Roll the paste into small balls.
  2. Freeze the balls for about 2-3 hours.
  3. Melt cacao butter on low flame, mixing in the cacao powder and maple syrup. Keep stirring until mixed before setting aside to cool and thicken.
  4. Take the balls out of the fridge and dip them in the chocolate coating and keep in the refrigerator for a few minutes. For an extra thick layer, dip in chocolate again before freezing for 20 minutes.

3. Whip up spinach eggs rolls


Become strong like Popeye the Sailor Man with a hearty dose of spinach bright and early with this wholesome recipe for egg rolls.


What you need:


  • Paprika
  • White pepper
  • Salt
  • Carrot
  • Spinach
  • Green fresh beans
  • Toast
  • White egg
  • Olive oil

Method


  1. In a bowl, mix the eggs and spinach with paprika, white pepper and salt to taste.
  2. Pour a bit of olive oil into a heated pan on the stove.
  3. Add your egg and spinach mix into the pan, spreading it evenly to create a round layer.
  4. In a second pan, spread some more olive oil. Add green fresh beans and salt, and cook to your liking. In a separate plate, shed carrots into thin slices.
  5. Carefully roll your spinach and eggs. Cut it into two and serve each halve with a side of green fresh beans and carrots, all ready to eat.

4. Pack a delicious pancake lunch


Whether your little one is going off to school or learning from home, pack a delicious snack box of their favourite treats. Not only will it give them the perfect learning boost once they’re back at their desk, but keep them well fed and happy throughout the day.
