Reading the menu at Savryn is like leafing through a travel brochure of flavourful African destinations. Featuring specialties from Egypt, Ghana, Nigeria, South Africa, Somalia and Tanzania among others, the restaurant, located at Wasl Vita Mall in Jumeirah 1, presents the vibrant culinary traditions of the continent with a contemporary twist.

Dramatic red and maroon curtain draped doors lead diners to an intimate 28-seater dining room, central to which is a chef’s counter circling an open kitchen. Lamps embellished with ostrich feathers and other design elements pay a striking homage to Africa, complementing the diverse menu crafted by chef Shehab Medhat. Winner of Top Chef Arabia, Medhat’s experience in kitchens in Ghana, South Africa, Kenya and Nigeria has influenced the refined plates, each of which is rooted in heritage yet reinterpreted for the modern palate.

Spice-driven and flavour-forward, Savryn plays with ingredients and textures to create dishes that surprise with their culinary innovation. Starters include bites like the kuky paka tartlet, a new take on the east African curry, and the Ostrich sambousek, made with minced ostrich, Kenyan mint yogurt and spicy raspberry gel. The fufu crab croquette is another highlight where king crab is mixed with yam fufu, date cream, pickled radish and beetroot, then topped with coconut-vanilla sauce and caviar.

Mains like Savanna Secrets that has chicken breast dressed in Senegalese yassa cream and Te Oyoo Tenn, a lamb chop flavoured with pomegranate molasses and served over spicy Ghanaian shito are reminders of how African regional flavours can be made to shine in fresh and modern ways. There are plenty of a la carte offerings - but for a complete taste, Savryn has a curated 10-course tasting menu, priced at AED465, which takes diners through all the standout dishes.
